Technical/Winemaking Notes:

Varietal Composition: 100% Semillon
Harvest: Hand picked on 7 April 2014. Around 30% botrytis infection was attained after allowing the fruit to hang on the vine for a month after all other varieties were harvested.
Fermentation/Oak: Crushed, pressed and then fermented in old white French oak barrels, using cultured yeast. The wine remained in barrel on lees for 3 months prior to bottling.

Alcohol: 12.0%
Production: 150 dozen 375mL

Tasting Notes:
A brightly fruity and complex dessert wine made from 100% barrel fermented Semillon fruit. The honey, baked apple and stewed pear aromas are followed by luscious ripe fruit characters and refreshing acidity to finish. While very drinkable now, it will gain further complexity over the next 5 to 10 years.
