Technical/Winemaking Notes:

Varietal Composition: 54% Cabernet Sauvignon; 44% Shiraz, 2% Chardonnay. All fruit certified organic.
Harvest: Cabernet hand picked on 18 April 2017; Shiraz machine picked on 19 April 2017.
Fermentation/Oak: Cabernet crushed to open fermenters, fermentation with cultured yeast, 12 days on skins post fermentation, 12 months barrel maturation in new (15%) and older French oak barriques, MLF completed in barrel. Shiraz crushed to open fermenters, with 15% whole bunches, fermentation with cultured yeast, MLF completed in tank, pressed to barrel after 1 week on skins post fermentation, 12 months barrel maturation in new (15%) and older French oak barriques. Blended in early January 2018.

Tasting Notes:
A blend of Cabernet Sauvignon and Shiraz, with aromas of plums, mulberries, spice and liquorice. Fresh sweet fruit on the front palate and a juicy mid palate. The wine has balanced freshness and mild, soft tannins and will drink well now and over the next 5 to 6 years.
