Technical/Winemaking Notes:

Varietal Composition: 55% Cabernet Sauvignon; 45% Shiraz, both certified organic in conversion.
Harvest: Cabernet hand picked on 24 March 2016; Shiraz hand picked on 16 March 2016.
Fermentation/Oak: Cabernet crushed to closed fermenters, fermentation with natural yeast, MLF completed in tank, pressed to barrel after 3 weeks on skins post fermentation, 9 months barrel maturation in older French oak barriques. Shiraz crushed to open fermenters, with 15% whole bunches, fermentation with natural yeast, MLF completed in tank, pressed to barrel after 1 week on skins post fermentation, 9 months barrel maturation in older French oak barriques. Blended in early January 2017.

Tasting Notes:
Aromas of plums, black berries, spice and dark chocolate. The palate is generous, soft and approachable with bright fresh flavours that are surprisingly complex as they evolve. This wine has great length of flavour and abundant soft juicy tannins, and is drinking well now.
