Technical/Winemaking Notes:

Varietal Composition: 100% Chenin Blanc
Harvest: Hand picked on 15 April 2013. Significant botrytis infection was attained after allowing the fruit to hang on the vine for a month after all other varieties were harvested.
Fermentation/Oak: Crushed, pressed and then fermented in old white French oak barrels, using cultured yeast. The wine remained in barrel on lees for 4 months prior to bottling.

Alcohol: 12.0%
Production: 100 dozen 375mL

Tasting Notes:
This light bodied dessert wine has a beautiful bouquet of lime marmalade, lemon butter and honeysuckle, with hints of botrytis. It is rich and sweet with great intensity to the flavours but still bright with a refreshing and balancing acid finish.
