Technical/Winemaking Notes:

Varietal Composition: 55% Semillon, 35% Sauvignon Blanc, 10% Chardonnay – all certified organic
Harvest: Semillon and Sauvignon Blanc machine harvested 21 February 2018; Chardonnay hand picked 14 February 2018.
Fermentation/Oak: Tank fermented, with 30% of the wine run off to French oak barrels (30% new) for part of fermentation, then returned to tank. All batches were kept separate and allowed to remain on gross lees for a further 3 months post fermentation. The primary wines were then blended with a small amount of Chardonnay to give some additional subtle flavour nuances and build extra texture into the wine, before being minimally fined and filtered.

Tasting Notes:
Complex aromas of peaches, papaya and a hint of passionfruit are supported by a lovely lime zest. Fresh lime, stone fruit and guava drive the palate and are followed by creamy nutty hints and a refreshing minerally finish. Great to drink now but will age beautifully.
